This is one of the mos t costly submitted. The Family storeroom and kitchen is a completely separate operation and is supervised by Henry Haller. There is some waste. We buy ground sirloin in two pound amounts on the retail market in order to have fresh meat. We occasionally must dispose of small amounts. Fresh vegetables, cereals, bread, eggs, milk, etc. are purchased in small amounts to avoid waste. We do not purchase mayonnaise or any perishable of this type in gallon or half gallon amounts for the Family storeroom. Ice cream is purchased in small amounts and only of the brands regularly used by the Family. Occasionally, for health reasons, some of it must be disposed of. Dr. Tkach has informed me that the "food poisoning" incident was traced to Camp David. In short, we are all extremely sensative to the Family's food operation and make every attempt to keep the costs at a MEMORANDUM THE WHITE HOUSE WASHINGTON - 2 - minimum. However, we feel that the First Family deserve the very best and that we should be prepared to serve whatever they request. Perhaps the policy of the First Family being charged for their daily "Family" meals should be changed. It would seem appropriate, however, that they should be charged for large functions of a purely personal nature.
