MEMORANDUM THE WHITE HOUSE WASHINGTON March 4, 1971 Memorandum for: Mr. Butterfield From: Rex Scouten Re Scontin Subject: Request to Renovate Residence Kitchen. There is a pressing need to completely renovate the Residence Kitchen because: 1. The main electric range and the baking ovens were originally installed in 1936. 2. All of the other kitchen equipment except for one range, 2 broilers and a gas grill are at least 20 years old. 3. We have inadequate ventilation and cannot make any improvement without a major renovation. 4. We do not have the recommended fire prevention- suppressing facilities and cannot improve without a major renovation. 5. The present arrangement of equipment was designed to serve around 4,000 guests a year, now we serve over 40,000 a year. At the time of the renovation and until 1961, we had a few major social functions a year; certainly not over two a month and then we normally had several days with no other activity in order to prepare for that one function. Briefly, the present kitchen was not designed to meet present day entertaining requirements and the great bulk of the existing equipment is obsolete.
