OZARK PUDDING
Beat 1 egg. If you use an electric
mixer, turn it to the lowest speed and
beat the egg 1 minute. Gradually add
3/4 cup sugar, continuing to beat the
mixture until very smooth. Set aside.
Measure 2 tablespoons flour, 1 and 1/4
teaspoons baking powder, and 1/8 teaspoon
salt. Sift together and add to egg-sugar
micture, stirring it in with a mixing spoon.
Add 1/2 cup chopped nut-meats, 1/2 cup
chopped raw apple, and 1 teaspoon vanilla.
Generously butter a 9-inch shallow pie
plate. Pour the pudding into it and bake
35 minutes at 350 degrees F. Serve with
whipped erean or ice cream.
After the pudding is in the oven about
15 minutes, it will rise, and in the
final 20 minutes will settle and then
emerge an even golden brown.
