ESCALLOPED EGGPLANT
TRUMAN NARA
1 eggplant
1 green pepper
butter, salt and pepper
1 can of tomatoes or four fresh tomatoes
Bread crumbs
grated cheese
parsley
Peel and dice eggplant
Boil until tender, drain well
Saute chopped green pepper in butter
Put half the eggplant in bottom of casserole,
then half of green pepper, tomatoes,
chopped parsley, butter, salt, black pepper and
bread crumbs
Add rest of eggplant, tomatoes, green pepper and
layer of grated cheese and bread crumbs.
Cover and bake until all vegetables are tender.
