UMAN N MARA BESS TRUMAN'S FROZEN LEMON PIE A specialty of a gracious former White House hostess, Mrs. Harry S. Truman, whose husband's fascinating book, "The Truman Memoirs, is captivating the people of America. Sprinkle well greased 9" pie pan or refrigerator tray with 1/4 cup fine graham cracker crumbs Pour in. Lemon Cream Filling (below) Sprinkle over top 1/4 cup fine graham cracker crumbs Freeze until firm. AMOUNT: 6 to 8 servings. Lemon Cream Filling Beat until frothy 3 egg whites Gradually add. 1/2 cup sugar Beat until stiff and glossy. Beat until thick and lemon-colored 3 egg yolks Fold into egg white mixture. Mix and beat until stiff 1 cup whipping cream grated rind and juice of 1 lemon (about 1/4 cup) (for more tart filling, use 1/3 cup lemon juice) Fold into egg mixture.
