ESCALLOPED EGGPLANT 1 Eggplant 1 Green pepper 1 Cup coarsely chopped celery 1 Can tomatoes or 4 freah tomatoes Bread crumbs Grated cheese About 1/4 # butter Chopped parsley Salt & pepper to taste ##### Peel and dice eggplant. / Boil eggplant and celery together until tender drain well. 1/ Saute green pepper - in butter. / Put half of eggplant - celery mixture in bottom of half of other ingredients. Add rest of egglant, etc., and cover with bread crumbs and grated cheese. / Gover and bake until all vegetables are tender.
