3. Lieutenent Albert G Hogan, Sanitary Corps, having
reported to the Commanding Gemeral of this Division, in com-
pliance with instructions from Headquarters, second Army, for
temporary duty in connection with the improvement of the organ-
ization messes, is hereby announced as Division Mess Officer.
This officer will establish a school in this Division for
the instruction of cooks and mess sergeants and for the improve-
ment of mess arrangements, veriety of menus, cooking, kitchens,
kitchen sanitation, elimination of waste, and general mess manage-
ment.
This school is named "The Divisional School for Mess
Management. Its personnel will be as follows:
1 officer in charge of the school;
4 mess sergennts;
Cooks and privates as may be detailed
from time to time.
Each regimental commander of Infantry will select his
best mess sergeant, who will report to Lieutenant Hogan at the se
Howdquarters, at the office of C-1, at 11:00 o*clock A.M.,
January 18th.
The School will be mobile, travel from one regiment or
groupof separate units to another, and remain approximately
four days in ecch place. The officer in charge of the school
will report to the commanding officers of each regiment or
group of units, in turn, for the purpose of establishing the
school. Commanders will provide every facility possible for
the carrying out of this work in an enthusiastic manner so that
yreal benefits may accrue to the Division through the efforts
of this school.
Each of the instructor cooks will be assigned to a group
of three or four kitchens. They will give necessary demonstrat-
ions and will see that directions in mess management are complied
with. The work of the school will be done in co=operation wi th
mess officers of the various units. Organizations will be rated
during the period of observation by company and by battalion.
