Sound nutrition not only controls many diseases (e.g.,
diabetes, hypertension, heart disease), but it can prevent
them from occurring.

BASIC PREPARATIONS
1 raw cup = 3 cups cooked or 8 servings
2/2 cup = 6 servings
½ cup = 4 servings
1 pound raw = 23/4 cup raw
OVEN METHOD
In order to remove starch, soak and drain rice, using a sieve, first in hot water, then in cold water, until
soak water is clear. This process usually takes three rinses in hot water followed by three cold rinses, each
rinse taking at least five minutes. Then soak in chicken broth or stock (three times liquid to rice) overnight
or all day in heavy covered casserole. Cook in same container uncovered at 350 degrees for 45 minutes (chewy)
to 60 minutes (fluffy), using bay leaf if desired. Before serving, remove bay leaf and excess liquid; add butter
to taste.
MICROWAVE METHOD
Soak and drain rice as provided above. In an uncovered 2 quart glass bowl or casserole, combine the rice
and chicken broth. Microwave on high speed for 5 minutes or until the mixture boils. Reduce the speed to
medium and cook for 40 to 45 minutes, then let the rice stand for 10 to 15 minutes. Drain.
OTHER METHODS
1. Rinse 1 cup raw wild rice thoroughly in a small mesh sieve. Drain and place in a covered baking dish.
Add 3 cups of water and three heaping teaspoons of granulated chicken bouillon. Stir. Cover and bake in
a 350 degree oven for 1½ hours. Check after one hour's time. If more water is needed, add it and fluff with
a fork. Continue baking for the additional half-hour. Rice should be moist, not dry.
If you are serving wild rice as a breakfast cereal, or if for any reason you don't want the meat flavor,
eliminate the bouillon and add 3/4 teaspoon of salt instead.
2. Rinse 1 cup wild rice thoroughly in a small mesh sieve. Drain and place in a heavy saucepan with
4 cups salted water. Bring to a boil, simmer covered for about 45 minutes, or until tender but not mushy.
Uncover, fluff with a fork and simmer for an additional 5 minutes. Drain excess liquid, if any.
Wild rice can be cooked ahead of time and stored in the fridge for about one week, or frozen, in a tightly closed
container. By doing this you can prepare many dishes in as little as 20 minutes time. Re-heating is particularly easy
with the microwave.

Dear Tom,
President Reagan has asked me to thank you for your letter and he looks
forward to seeing you on the 12th.
Regarding the needy, the President liked your suggestions and I think
you will be pleased to hear about the programs being coordinated by the
White House Office of Private Sector Initiatives.
On December 19, by Presidential Proclamation, the President will
announce "National Care and Share Day" encouraging citizens across the
country to donate food to their less fortunate neighbors. As in the
past, the White House and General Services Administration will sponsor
a nationwide food, clothing and toy drive to help the needy.
Also, the Departments of Health and Human Services and Defense are
permitting military commissaries to transfer unmarketable items, with
torn labels or dents in the containers, to food banks. 192 military
installations will be donating to 129 food banks across the country.
A number of other private sector examples are being showcased across
the country to encourage people to take care of their neighbors at
Christmas time and beyond.
The President sends his regards and hopes you have some more jokes for
him on the 12th.
